OUR STORY

One grow room, one clear idea.

Kinoko started with a simple observation: Lebanon's mushroom growers were all chasing volume, and freshness was the thing nobody was fighting for.

So we built Kinoko around small, carefully watched batches instead. You'll find our mushrooms at local khodarjeeye, stocked the way you'd expect to buy your produce — and for restaurants, chefs, or anyone who wants it straight from the source, we take direct orders too.

We currently grow white button mushrooms as our anchor crop, with oyster mushrooms in active development and shiitake planned further down the road. Every new variety only earns a place in the lineup once we've proven we can grow it properly at small scale, first.

"From soil to soul" isn't a slogan we picked. It's the whole operating model.
HOW WE GROW

Every batch follows the same honest timeline.

No shortcuts, no forcing it. From the day compost arrives to the day a batch is fully spent, here's exactly what a Kinoko grow cycle looks like.

Compost arrives
Fully spawn-run substrate is loaded into the growing room and cased — the foundation every flush depends on.
Day ~20
First flush
The first mushrooms break through the casing layer. This is where consistent watering makes or breaks the yield.
Day 20–45
Ongoing harvest
Multiple flushes come through in waves. Each one is picked at peak and delivered within the day.
Day ~45
Cycle complete
The room is cleared, cleaned, and reset for the next batch — keeping a steady, predictable supply running.
